My favourite side dish to a biryani is the Kerala Chicken Fry. In my family, we lovingly call it Ben Fry, named after a family member who loved it so much when he visited India. He couldn’t stop with, not two, not three, but four large drumsticks of this yummy chicken! I cook it only in a cast iron skillet cause you want all that tasty, fried masala with a nice char on the chicken when you serve it. You could also cook it on a BBQ grill, and it will have an incredible smoky flavour added to it. Hope you enjoy this one:)
Time:
- Prep time – 1 hour
- Cook time – 15 minutes
Ingredients:
- Chicken (Boneless or with Bone – cut into medium sized pieces) – 1/2 kg
- Ginger garlic paste – 1 tbsp
- Chilli powder – 1 tbsp
- Garam masala powder – 1 tsp
- Fennel Powder – 1 tsp
- Turmeric Powder – 1 tsp
- Salt – 1 tsp
Method:
- Marinate the chicken with the above ingredients and set aside for an hour
- Deep fry in a cast iron skillet for 15 minutes. Let the chicken drain any excess oil by placing over kitchen paper towels
- Place in a serving dish 🙂
