Semiya pulao is one of those dishes that I can eat anytime of the day….it’s subtle in flavor, nutritious and has that acidic kick that tastes so so good! I made this for my husband yesterday and he enjoyed it with some mango pickle on the side. Hope you try this healthy version of the MTR Vegetable Pulao Recipe:)
Time:
- Prep time – 15 minutes
- Cook time – 20 minutes
Ingredients:
- MTR Semiya – 2 cups
- Mixed vegetables
- Corn – 1/4 cup
- Carrots (diced) – 1/4 cup
- Green beans (1-inch pieces) – 1/4 cup
- Large Red Onion (chopped) – 1
- Tomato (chopped) – 1
- Red Capsicum (diced) – 1
- Lemon juice – 2 tsp
- Salt – 1.5 tsp
- Coriander leaves for garnish
Method:
- Cook the Semiya in boiling water for 2 minutes. Strain and cool with cold water
- Heat a pan with oil. Fry the onions, tomatoes, carrot and capsicum. Do this until the onions turn golden brown and the carrots are soft
- Add the salt and mix well
- Add the cooked Semiya and mix well with the vegetables until well combined. Do this for 1 minute
- Turn off the heat. Add the lime juice and coriander leaves for garnish. Mix well
- Serve hot with some Indian pickle 🙂
