Cajun Chicken Pasta

Cajuns, an ethnic race, are known for their joie de vivre, and to add flavor to their food, they experimented with herbs and spices to make some of the most delicious dishes that people throughout North America and the world now enjoy.  When I first heard about this recipe I had an instant craving for it! It’s a decadent pasta dish with vegetables, chicken, and yummy linguini or fusilli pasta. The combination makes for a rich, creamy pasta….just the way I like it:) I love the unique homemade cajun seasoning which tastes so good.

Time: 

  • Prep time – 30 minutes
  • Cook time – 25 minutes

Ingredients: 

Cajun Seasoning Ingredients- I make this in bulk and keep aside for future use. We need only 3 tsp of this spice mixture for the recipe. You need to mix all the below ingredients together to get the cajun seasoning

  • Coarse Salt – 2 tbsp
  • Paprika – 2 tbsp
  • Garlic powder – 1 tbsp
  • Onion powder – 1 tbsp
  • Cayenne pepper – 1.5 tsp
  • Crushed Red Pepper Flakes – 1.5 tsp
  • Dried Oregano – 1.5 tsp
  • Dried Thyme – 1.5 tsp
  • Black Pepper Powder – 1.5 tsp

Cajun Chicken Pasta Ingredients – these are the remaining ingredients for the recipe

  • Linguini or Fusilli pasta – 1 box
  • Chicken Breast (Cut into small strips) – 250 grams
    • Marinate the chicken breast pieces for half an hour in 3 tsp of the cajun seasoning
  • Red Bell Pepper (Cut into long strips) – 1/2
  • Yellow Bell Pepper (Cut into long strips) – 1/2
  • Yellow onion (finely chopped) – 1
  • White Mushrooms (Slit in half) – half a box or 6 oz
  • Garlic cloves (finely chopped) – 6
  • Unsalted butter – 2 tbsp
  • Olive oil – 2 tbsp
  • Chicken stock (Less Sodium) – 1 cup
  • Heavy cream – 1/4 cup
  • Freshly chopped parsley – 2 tbsp
  • Salt – 1/2 tsp (More or less, as per taste)
    • Use less salt if your chicken stock has a regular sodium content

Method: 

  1. In a pan, heat 1 tbsp olive oil and 1 tbsp of butter. Stir fry the marinated chicken breast. Once cooked, take the chicken out and set aside
  2. In the same pan, add little more butter and cook the onions until they are translucent
  3. Add the garlic and fry for a minute. Then add the mushrooms and bell peppers. Stir-fry for a few minutes
  4. Add the salt. Mix well, then add the chicken stock and fried chicken strips. Let the sauce simmer for 10 minutes. Keep mixing every 2 minutes
  5. Prepare your pasta in water during this time as per the pasta maker’s instructions. I like to cook it al dente. Once complete, drain the water and set aside
  6. The sauce should have thickened by now. Add the heavy cream and mix well. Let it simmer for a minute, and then add the cooked pasta
  7. Garnish with the freshly chopped parsley and enjoy 🙂
