My sister bakes some of the best cakes and I wanted to share some of her delicious recipes with all of you! This delectable, chocolatey cake is one of my favorites. She made it lovingly for my brother-in-law on his birthday and it was absolutely scrumptious. Enjoy 🙂
Time:
- Prep time – 20 minutes
- Cook time – 30 minutes
Ingredients for the Cake:
- All-purpose flour – 1.5 cups
- Castor Sugar – 1 cup
- Unsalted Butter – 227 g
- Sour Cream – 1 cup
- Chocolate – 1 cup
- I used Lindt dark chocolate 70 %
- Salt – 1/2 tsp
- Vanilla extract – 2 tsp
- Baking Powder – 1 tsp
- Baking Soda – 1 tsp
- Eggs – 4
Ingredients for the Chocolate Icing:
- Unsalted Butter – 1/3 cup
- Cocoa Powder – 2/3 cup
- Milk – 1/3 cup
- Powdered Sugar (a.k.a Icing Sugar) – 2 cup + 2/3 cup
- Vanilla Essence – 1 tsp
Method:
- Preheat the oven to 350F
- Mix the dry ingredients together, sift, and set aside
- Cream the butter and sugar together in a bowl with a hand mixer
- Add the eggs one at a time to this and mix
- Add vanilla extract and mix
- Mix in the dry ingredients to this mixture and incorporate well using the hand mixer
- Melt the chocolate in a bain-marie (a container holding hot water into which a pan is placed for slow cooking) or in 15-second intervals in microwave mixing each time
- Add this melted chocolate to the mixture and mix well
- Add the sour cream in and mix it all together
- Bake in two 9 inch pans in the oven for 30 minutes
- Once done, let the cakes cool. Then take the cakes out of the pans gently by flipping onto plates or a cake stand
- To prepare the icing:

Melt the butter in a small saucepan over low heat. Add the cocoa powder and stir until the mixture is smooth. Remove the pan from the heat and place the mixture into a medium-sized bowl. Let it cool slightly.

Add the powdered sugar alternately with the milk and vanilla to the cocoa mixture. Beat with an electric mixer until you have the consistency you desire.

- Spread the icing on the cake, and decorate with berries and chocolate sprinkles 🙂
