Chicken Broccoli Stir Fry

Part of my comfort food list, this dish is a simple one bringing out the excellent flavors of chicken and broccoli. Homely and delicious with every single bite. I made it on a cold day and it warmed my heart and stomach! Enjoy it with a bowl of rice 🙂

Time: 

  • Prep time – 20 minutes
  • Cook time – 30 minutes

Ingredients: 

  • Boneless Chicken Thighs (Cut into small chunks) – 450 g 
    • Season with some Black pepper powder
  • Broccoli Florets – 2 cups
  • Vegetable Oil – 3 to 4 tbsp
  • Ginger Squeeze or Freshly minced Ginger – 1 tbsp
  • Garlic (Finely Chopped) – 1 tsp
  • Oyster Sauce – 1/4 cup
  • Toasted Sesame Oil – 2 tsp
  • Water – 1/4 cup
  • White Sugar – 1 tsp
  • Low Sodium Soy Sauce – 1 tsp
  • Cornstarch – 1 tsp
    • Mix with 1 tbsp of water

Method: 

  1. Heat 2 tbsp of vegetable oil in a flat, wide base, frying pan over medium heat. Add the broccoli and saute for about 4 minutes 
  2. Add the ginger and garlic and mix for another minute
  3. Set aside the cooked broccoli and wipe the pan clean
  4. Add the remaining vegetable oil and heat it
  5. Add the chicken and mix until cooked through
  6. Once the chicken is  cooked, add the broccoli and mix everything for 2 minutes
  7. In a bowl, combine the oyster sauce, sugar, toasted sesame oil, soy sauce, and water.
  8. Pour this mixture over the chicken and broccoli. Mix well for a minute
  9. Add the cornstarch mixed with water and mix well for another minute 
  10. Serve with rice and enjoy 🙂
