In South India, we love our thoran dishes. Thoran dishes essentially have grated coconut in them. You will find it in a lot of sadhya menus. One of my favorites is carrot and beans thoran! It’s perfect with rice, yogurt, fried fish, and some pickle. Writing this is making my mouth water! Try this simple, flavorful dish and let me know what you think 🙂

- Cook time – 15 minutes
Ingredients:
- Grated coconut – 1/2 cup
- Carrots (Grated) – 250 g
- Green Beans (Finely cut) – 250 g
- Indian Green Chilly (Chopped) – 4
- Pearl onions – 6
- Garlic (Chopped) – 1 tsp
- Turmeric Powder – 1/4 tsp
- Cumin Seeds – a pinch
- Mustard Seeds – 1/2 tsp
- Curry leaves – 8
- Coconut Oil – 2 tbsp
- Salt to taste
Method:
- In a large bowl, combine the grated coconut, Indian green chilly, pearl onion, garlic, turmeric powder, and cumin. Combine and mix well
- Heat oil in a deep dish pan and add the mustard seeds. Let them splutter
- Then add the curry leaves and the combined ingredients from step 1. Saute well for 3 minutes. Be careful to not make the coconut brown
- Add the beans, carrots, and salt to taste. Combine everything
- Add 1 tbsp of water. Cover and cook on low heat till the vegetables are cooked
- Enjoy with some rice or rotis 🙂
