Dry Chilli Chicken

Indo-Chinese Chilli Chicken has been on my list for a long time and it is finally here! I absolutely love this dish and it is a favorite in India too. There are many types of chilli chicken recipes out there but this recipe from my aunt is much loved in the family and its the one I follow. We had this with Kerala Parathas which make an excellent combination 🙂

Time: 

  • Prep time – 70 minutes
  • Cook time – 15 minutes

Ingredients to Marinate the Chicken: 

  • Boneless Chicken Thighs (Cut into bite sized pieces) – 2 lbs or (about 900 g)
  • Thick Dark Soy Sauce (I use Koon Chun Brand) – 2 tbsp
    • I bought Koon Chun Soy Sauce on Amazon and this works well cause it gives a darker color to the chicken
  • Ground Ginger – 1 tbsp
  • Ground Garlic – 1 tbsp
  • Egg – 1
  • Cornstarch – 2.25 tsp
  • Black Pepper Powder – 1/2 tsp
  • Red Food Colouring (Optional) – a few drops
  • Salt to taste

Ingredients for Stir Fry : 

  • Oil – enough to shallow fry the chicken on all sides
  • Green bell pepper (Julienned) – 1/2
  • Red bell pepper (Julienned) – 1/2
  • Yellow Onion (Julienned) – 1
  • Tomato Sauce (Note: This is Not Ketchup) – 1/4 cup
    • Look for this near the canned tomato paste section. If you don’t have access to tomato sauce then blend 1/2 a tomato and add that
  • Indian Green Chilli (Slit) – 3
  • Indian Green Chilli Sauce (Optional) – 2 tsp
    • I used Ching’s Green Chilli Sauce

Method: 

  1. Marinate the chicken with the soy sauce, ginger, garlic, egg, cornstarch, black pepper, red food coloring and salt. Let this marinate for 1 hour
  2. Heat oil in a deep dish pan and shallow fry the chicken on both sides. If you think you need more cornstarch add a little more (Note: Chicken shouldn’t be coated too much with corn starch as the dish will lose its flavor. Just a thin coat to hold its shape). Set aside once the chicken is fried through
  3. Heat some oil in a deep dish pan and add the onion. Saute for 3 minutes, then add the bell peppers and green chilli. Saute for 5 minutes
  4. Add the chicken and mix well for 2 minutes
  5. Add the tomato sauce and Indian green chilli sauce. Mix for a minute
  6. Serve hot with some fried rice, chow mein or Kerala paratha 🙂
