Salad with Peanut Hoisin Sauce

Who says healthy eating can’t be yum? This salad was so good, I could eat this for a while to come. The best part is the creamy peanut dressing (lol no judging me :D). I’ve been tripping on salads lately in an attempt to eat cleaner and this is my latest addiction. If you need veggies in your life and feel the need for some extra flavor, try this and you will feel satiated 🙂
Time: 
  • Prep time – 15 minutes
  • Cook time – NA

Ingredients for Salad: 

  • Shredded Lettuce – 1/2 cup
  • Baby Spinach – 1/2 cup
  • Shredded Red Cabbage – 1/4 cup
  • Shredded Carrot – 1/4 cup
  • Tomato Slices – 2
  • Navel Orange Slices – 2
  • Cucumber Slices – 2
Ingredients for Dressing: 
  • Creamy Peanut Butter – 1/3 cup
  • Low Sodium Soy Sauce – 1 tbsp
  • Hoisin Sauce – 2 tbsp
  • Sriracha – 2 tsp
  • Finely Grated Ginger – 1 tsp
  • Hot water – 6 tbsp

Method: 

  1. In a large mixing bowl, combine the salad ingredients (except the tomato slices and orange slices)
  2. In another bowl, mix together the dressing ingredients
  3. Take a serving bowl, and put a handful of the salad ingredients in it. Pour some of the dressing. Place the tomato slices and orange slices over and enjoy 🙂
