Calling all okra lovers to try this dish! I didn’t want to take away from the natural flavor of okra so this is minimally seasoned with spices. Okra has prominent levels of Vitamin A, B, and C as well as some zinc and calcium. This makes it an ideal vegetable for pregnant women to consume. Pregnant or not, you will see some wonderful health benefits from consuming this vegetable along with a tasty dish 🙂
Time:
- Prep time – 15 minutes
- Cook time – 20 minutes
Ingredients:
- Okra (Cut into 1/2 inch pieces) – 500 g
- Mustard Seeds – 2 tsp
- Olive Oil – 3 tbsp
- Curry Leaves – 15
- Salt to taste
Method:
- Heat the oil in a deep dish pan
- Add the mustard seeds, salt, and curry leaves. Let is splutter
- Add the okra and saute gently for 3 minutes. Cover and cook for 15 minutes (mixing in between)
- Uncover and saute gently till all stickiness has gone
- Serve warm 🙂
