Pazham Puri a.k.a ethakkappam or banana fritters are a common snack in Kerala. Recently, I was told that it is not only a common snack in Kerala but also a favorite in the Caribbean islands especially Jamaica and Cuba. The tropical weather in these regions allows the abundant growth of banana trees and hence bananas are an integral part of the cooking. Payam puri is a snack that I have enjoyed for years, it tastes best when the banana is very ripe and soft 🙂
Time:
- Prep time – 5 minutes
- Cook time – 10 minutes
Ingredients:
- Ripe Bananas (Peeled) – 3
- Cut each banana into 3 parts then slice each part lengthwise in half
- Water – 1/4 cup
- All purpose Flour – 1/2 cup
- Rice Flour – 1/4 cup
- White Sugar – 1 tsp
- Baking Soda – a pinch
- Oil for frying
Method:
- Make a thick batter with both the flours, sugar, baking soda and water
- Dip the banana slices in the batter and deep fry in hot oil till golden brown
- Drain off excess oil on kitchen paper towels
- Serve hot 🙂
