All of us love rice….it’s versatility allows us to enjoy it with a variety of food and it takes a few minutes to put together. A better version of rice is fried rice. In my home, we always cook fried rice with butter rather than oil. The butter transforms the flavor of regular fried rice and takes it to “da-bomb” level. This recipe combines three of my favorite ingredients to create a simple, yummylicious dish for you to enjoy with almost anything! Try it at home this weekend 🙂
Time:
- Prep time – 15 minutes
- Cook time – 10 minutes
Ingredients:
- Sweet Corn – 1 cup
- I use frozen sweet corn, then add it to boiling water and let it cook on medium-low heat for 15 minutes
- Cooked Cold Basmati Rice – 2.5 cups
- Cook the rice with little salt as you will be using salted butter to stir fry
- You need cold cooked rice as the butter coats the rice well
- No clumps
- Black Pepper Powder – 1/4 tsp
- Salted Butter – 5 tbsp
Method:
- Heat the butter in a deep dish pot
- Add the cooked corn and black pepper powder. Saute for 2 minutes
- Add the cooked cold rice (Ensure to remove any clumps before adding the rice). Mix well on medium-high heat until everything is well combined
- Serve warm with gravy dishes 🙂
