Walnut Cake

Yes! It’s the weekend, a time when we all like to indulge in delicious food and get some much needed R&R 🙂 I wanted to post something special which will leave a lasting impression. So here is a lip-smacking, gorgeous Walnut Cake! I got the recipe from my sister, who made this as a surprise for her husband on their wedding anniversary. Ever since I heard the rave reviews, I have been daydreaming about it. Enjoy 🙂

Time: 

  • Prep time – 20 minutes
  • Cook time – 30 minutes

Ingredients: 

  • All Purpose Flour – 2 cups
  • Baking powder – 2 tsp
  • Baking soda – 1 tsp
  • Green Apple (Grated and Squeezed) – 2 cups
  • Eggs – 4
  • Vanilla Extract – 1 tsp
  • Powdered Walnuts – 1 cup
  • Cinnamon powder – 1/2 tsp
  • Unsalted Butter – 1 cup
  • Muscovado sugar – 1.25 cups (or Dark brown sugar)
  • Sunflower Oil – 1/2 cup (or any flavorless oil)
  • Topping: Caramelize 2 tbsp of dark brown sugar and add 2 tbsp of dry roasted walnuts
  • Powdered sugar to dust

Method:

  1. Preheat the oven to 360 F
  2. In a stand mixer (a stand mixer is ideal as this cake is harder to mix, but if you don’t have one use a hand mixer and mixing bowl) beat the butter till the butter becomes pale yellow and fluffy
  3. Add muscovado sugar and mix for a minute
  4. Add the oil and mix for half a minute
  5. Add the eggs one at a time and mix each time until the mixture is light and fluffy. The eggs need to be well incorporated to get a soft cake
  6.  Add the grated apple, the walnut powder, and vanilla extract. Mix for another minute
  7. In a separate bowl sift the flour and other dry ingredients. Add the sifted ingredients to the wet ingredients in two batches and mix until it is well combined (Ensure not to over mix as the cake will become tough)
  8. Pour the batter into a greased baking dish and bake at 360 F in the preheated oven for 30 minutes or until an inserted toothpick comes out clean
  9. Once complete, spread the caramelized walnuts on the center of the cake and dust with powdered sugar
