Eggcellent Masala

First, you are probably wondering about the title. Lol, that was a recommendation from my brother in law for a unique and tasty egg dish. I think it’s quite catchy! Coming back to the dish, this is a really quick Kerala egg masala recipe that’s great to serve if you have a large family. We are all racing against the clock these days with so many things to do but so little time. This egg-cellent masala is your answer to a quick meal. I enjoyed this with phulkas 🙂

Time: 

  • Prep time – 15 minutes
  • Cook time – 5 minutes

Ingredients: 

  • Boiled Eggs – 7
  • Kashmiri Chilli Powder – 1.5 tsp
  • Black Pepper Powder – 1/2 tsp
  • Garam Masala – 1 tsp
  • Coconut oil – 2 tbsp
  • Curry Leaves – 1 sprig
  • Salt – 1/4 tsp or to taste

Method: 

  1. Heat the coconut oil in a pan. Add the curry leaves and saute for 15 seconds
  2. Add the masalas and salt and saute for 2 minutes on medium heat (Ensure that the masalas don’t get burnt)
  3. Add the eggs and let the masalas coat the eggs. Saute for a minute
  4. Serve warm 🙂
