Lettuce Almond Crunch Salad

My family requests that I make this salad for get-togethers. It’s crunchy and very good; everyone goes back for seconds! I prepared this on a day when I found that my refrigerator had very few ingredients remaining to cook with. So the best solution was to put a salad together and finish it all. It makes a great addition at get-togethers as it not only looks great but you can prepare a lot of it in a few minutes. Hope you enjoy it 🙂

Time: 

  • Prep time – 5 minutes
  • Cook time – 10 minutes

Ingredients: 

  • Romaine Lettuce (Finely Torn)- 225 g
  • Baby Spinach – 150 g
  • Grated Parmesan – 3/4 cup
  • Dried Cranberries – 1/2 cup
  • Glazed Sliced Almonds – 1/2 cup
    • In a heated pan, combine 2 tbsp of sugar and 1/2 cup of sliced almonds. Stir until the sugar has melted and the nuts are glazed. Ensure not to burn the almonds
  • Scallions (Chopped) – 5
  • Balsamic Vinegar – 1/4 cup
  • Olive Oil – 1/4 cup
  • Sugar – 1 tbsp
  • Salt as per taste
  • Pepper as per taste

Method: 

  1. In a large mixing bowl, add the romaine lettuce, baby spinach, parmesan, cranberries, and scallions. Mix them all together
  2. In a separate bowl, mix the balsamic vinegar, olive oil, and sugar. Pour this mixture over the salad and toss everything together
  3. Meanwhile, prepare the glazed sliced almonds and add them to the top of the salad
  4. Toss once again and enjoy 🙂
