My family requests that I make this salad for get-togethers. It’s crunchy and very good; everyone goes back for seconds! I prepared this on a day when I found that my refrigerator had very few ingredients remaining to cook with. So the best solution was to put a salad together and finish it all. It makes a great addition at get-togethers as it not only looks great but you can prepare a lot of it in a few minutes. Hope you enjoy it 🙂

- Prep time – 5 minutes
- Cook time – 10 minutes
Ingredients:
- Romaine Lettuce (Finely Torn)- 225 g
- Baby Spinach – 150 g
- Grated Parmesan – 3/4 cup
- Dried Cranberries – 1/2 cup
- Glazed Sliced Almonds – 1/2 cup
- In a heated pan, combine 2 tbsp of sugar and 1/2 cup of sliced almonds. Stir until the sugar has melted and the nuts are glazed. Ensure not to burn the almonds
- Scallions (Chopped) – 5
- Balsamic Vinegar – 1/4 cup
- Olive Oil – 1/4 cup
- Sugar – 1 tbsp
- Salt as per taste
- Pepper as per taste
Method:
- In a large mixing bowl, add the romaine lettuce, baby spinach, parmesan, cranberries, and scallions. Mix them all together
- In a separate bowl, mix the balsamic vinegar, olive oil, and sugar. Pour this mixture over the salad and toss everything together
- Meanwhile, prepare the glazed sliced almonds and add them to the top of the salad
- Toss once again and enjoy 🙂
