Pasta is great anytime of the week but this one is for when your short on time and want a tasty meal. Pesto meaning anything which is made by pounding has many varieties, both traditional and modern. The addition of basil, the main ingredient of modern pesto, occurred only in the 19th century. Until then it was prepared without it. I’m glad the addition happened because basil is the essence of the dish!
Time:
- Prep time – 5 minutes
- Cook time – 10 minutes
Ingredients:
- Fresh Basil Leaves – 2 bunches
- Extra Virgin Olive Oil – 1/2 cup
- Parmesan Cheese (Crumbled) – 1/2 cup
- Black Pepper Powder – 1/4 tsp
- Garlic (Chopped) – 1 tsp
- Cashews – 1/4 cup OR Pine nuts – 1/4 cup
- Salt – 1/2 tsp
- Pasta – 10 oz
Method:
- In a blender, blend the basil leaves, parmesan cheese, pepper powder, garlic, cashews, and salt. Blend for two minutes
- Add the olive oil to the blended mixture and mix it all together until well combined. Set Aside
- In a separate pan, prepare your pasta. Once ready, drain the pasta and mix it with the prepared pesto sauce from Step 2
- Serve warm and enjoy 🙂
