Lime Rice is a delicious dish from South India. I remember my mom making this for me when I went on long road trips. The acidic, refreshing, tangy flavor would keep my tummy happy and keep away all the motion sickness. It’s something you can whip up with any leftover rice, so instead of throwing it out, transform it into this fragrant rice! I ate this with my mango pickle 🙂
Time:
- Prep time – 10 minutes
- Cook time – 15 minutes
Ingredients:
- Basmati Rice – 1 cup
- Cook with 1 tsp salt and set aside
- Mustard Seeds – 1 tsp
- Urad Dal – 1 tsp
- Peanuts with skin – 10
- Small Onion/ Pearl Onion (Sliced) – 4
- Dried Red Chilli – 2
- Curry Leaves – 10
- Indian Green Chilli (Chopped) – 1
- Turmeric – 1/8 tsp
- Lime Juice – Juice of 2 limes
- If you want more acidity, you can add the juice of 1 more lime
Method:
- Cook the basmati rice according to your rice cooker instructions. While cooking the rice, add 1 tsp of oil and the salt
- Take a pan and heat some oil. Then add the mustard seeds and urad dal. When it splutters add the small onions, dried red chillies, curry leaves and green chilli. Saute for 2 minutes
- Add the turmeric and mix well
- Pour the mixture over the rice and add the lime juice. Mix it well together until the rice is yellow. Check for acidity and decide if you need more lime juice
- Garnish with ground nuts and enjoy 🙂 (I also enjoy it with some crisps on the side)
