Butter Chicken

I absolutely love butter chicken! It’s one of the those things that I don’t think I could get sick of. So when my aunt (the great cook) gave me this recipe, I was like OMG, I need to try this asap. The flavor was unbelievably good and my mouth is watering just thinking about it. You have to try this out. The beauty of it is that it doesn’t take too long to make. I tend to make a large batch of the gravy. That way I can make the chicken anytime I want, add it to the gravy and voila! Butter chicken in no time.

Time:

  • Prep time – 15 minutes
  • Cook time – 30 minutes

Ingredients:

  • Chicken (Boneless and chopped into medium sized pieces) – 1/2 kg
  • Large red onion (finely chopped) – 1
  • Roma Tomato (chopped) – 1
  • Ginger garlic paste – 2 tsp
    • If you can’t find ginger garlic paste, take 1tsp of finely chopped garlic and 1tsp of finely chopped ginger and mix together
  • Olive oil – 1 tbsp
  • Unsalted butter – 2 tbsp
  • Small Indian Green Chilli (chopped) – 2
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cayenne powder – 1 tsp
  • Garam masala – 1 tsp
  • Methi leaves (dry) – 1 tsp
  • Nutmeg powder – 1/8 tsp
  • Tomato paste – 2 tbsp (I like to add more as I love the flavor)
    • I used Whole Foods 365 Brand Tomato Paste
  • Heavy cream – 1/2 cup (OPTIONAL)
  • Cashews – 10
  • Salt – 1 tsp
  • Coriander for garnish

Method:

  1. Marinate chicken with (Salt – 1/8 tsp, Yogurt – 1 tsp, Turmeric Powder – 1/8 tsp, and Garam masala – 1/8 tsp). Set aside for 15 minutes
  2. Broil chicken or lightly saute without oil until the chicken is cooked
  3. In a SEPARATE pan, add the olive oil and unsalted butter. Heat this, then add the onions, tomatoes, green chilli and ginger garlic paste. Saute until brown
  4. Add the masalas and saute
  5. Add tomato paste and mix well into the rest. I add extra tomato paste as I enjoy this flavor
  6. Add the heavy cream, cashews, and methi leaves. Mix well until well combined. Reduce heat
  7. Take the whole gravy and put into a blender. Blend until it is a smooth paste
  8. Take a serving dish, pour in the blended gravy. Add the cooked chicken. Mix the chicken into the gravy. Garnish with coriander
