Bombay potatoes

If you’re looking for a recipe which is quick and packed with flavor, this is the one for you. I recently gave this a try, because we love everything potatoes in my house. The result was a fantastic, mouth-watering meal. Perfect with chappatis, phulkas, or anything you like! Enjoy 🙂

Time:

  • Prep time – 15 minutes
  • Cook time – 5 minutes

Ingredients:

Bombay potatoes ingredients

  • Baby potatoes (Cubed) – 6 OR 500 grams
  • Olive oil – 2 tbsp
  • Curry leaves – 10
  • Cumin Seeds – 1/2 tsp
  • Mustard Seeds – 1 tsp
  • Ginger garlic paste – 1 tbsp
  • Red Chilli – 2 (chopped)
  • Kashmiri Chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Salt – 1 tsp
  • Water – 1/4 cup
  • Coriander leaves (for garnish)

Method:

  1. Boil the baby potatoes until cooked through. Peel, cube, and set aside
  2. Heat oil, add curry leaves, cumin seeds, mustard seeds, ginger garlic paste, and red chilli
  3. Add masalas and salt
  4. Add potatoes and coat it with the tempered oil. Cover and cook for 20 minutes (add water to prevent potatoes from burning)
  5. Season with coriander
