Recently, I was craving for some rice, beans thoran, fish fry, and moru curry. It’s a comfort meal for me and I love to have it for lunch. I tried my family beans thoran recipe which is so good that you end up eating a large bowl of beans in one sitting. Beans thoran is a Kerala recipe which uses green beans sauteed with grated coconut as the main ingredients. Many have it as a side dish to rice but you could enjoy it with some rotis as well 🙂

Ingredients:
- Green Beans (Chopped into small rounds) – 500 g
- Grated Coconut – 3/4 cup
- Indian Green Chilly (Chopped) – 2
- Garlic (Minced) – 2 tsp
- Coconut Oil – 2 tbsp
- Mustard Seeds – 1/4 tsp
- Curry Leaves – 15
- Shallots (Chopped) – 4
- Turmeric Powder – 1/4 tsp
- Salt to taste
Method:
- Use a blender to blend the garlic and green chilly. Next, add the grated coconut and blend for 30 seconds. Set the mixture aside for later use
- Heat the coconut oil in a deep dish pan. Add the mustard seeds and curry leaves. Let the mustard seeds splutter a bit
- Add the shallots and saute for 5 minutes on medium heat
- Add the turmeric powder and mix well
- Add the grated coconut mixture (from Step 1) and saute for 2 minutes
- Add the beans and salt to taste. Mix everything for 2 minutes then cover and cook for 20 minutes (Mix in between)
- Serve warm and enjoy 🙂
