Once in a while, we all need a good meatball in our lives. Something incredible happens when you mix ground meat with bread, herbs, and seasoning. This dish is a fusion of east meeting west. I love sesame on almost anything, and it just seemed to work brilliantly on meatballs! Try this over the weekend and avoid that run to your local restaurant. Your gonna love it 🙂
Time:

Ingredients for the Chicken Meatballs:
- Ground chicken – 1 lb
- Egg – 1
- Traditional breadcrumbs – 1/2 cup
- Garlic (Minced) – 1 tsp
- Ginger (Minced) – 1 tsp
- Low Sodium Soy Sauce – 1/2 tsp
- Green Onions (Chopped) – 2
- Freshly cracked black pepper – 1/8 tsp
Ingredients for the Sesame Glaze:
- Low Sodium Soy Sauce – 1/2 cup
- Dark Brown Sugar – 1/2 cup
- Water – 1/2 cup
- Sesame oil – 1/2 tbsp
- Rice Vinegar – 1 tbsp
- Ginger (Minced) – 1 tsp
- Toasted Sesame Seeds – 1 tbsp
- Cornstarch – 2 tbsp
- Mix the cornstarch with 2 tbsp of water and make a slurry
Ingredients for the Rice:
- Basmati Rice – 3 cups (160 ml cup size)
- Water – as needed to cook the rice
- Green Onions (Chopped) – 2
Method:
- Preheat the oven to 400 F
- Add all the chicken meatball ingredients to a mixing bowl and combine with you hands until everything is evenly mixed
- Take a baking sheet and cover it with foil. Prepare small lime sized balls with the meatball mixture and place on the baking sheet. Space them evenly. You should yield about 25 meatballs
- Bake in the heated oven for 20 minutes. Then flip them and place it back in the oven for 20 minutes more
- While the meatballs are cooking, prepare your rice and set aside (While cooking your rice, add green onions to it)
- Start preparing the sesame glaze. In a medium heated pot, combine the soy sauce, brown sugar, water, sesame oil, rice vinegar, and ginger. Mix until the sugar has dissolved
- Add the cornstarch and turn the heat up to medium-high. Mix until the sauce has thickened
- Add the toasted sesame seeds (if you have regular white sesame seeds, just dry roast them in a small pan for two minutes on medium heat. The result will be toasted sesame seeds)
- Mix well for 2 minutes and turn off the heat
- Once the meatballs are ready, transfer them into the sesame glaze pan. Mix everything together
- To serve, take a bowl and add some rice to it. Add few meatballs, then pour the sesame gravy over. Garnish with green onions and serve 🙂
