Paneer Bhurji….ahhh! Comfort food in my home. If you have picky eaters in your family, give this a try. It is a favorite in the buffet line up at the local Indian restaurant I visit. Paneer has some great health benefits. Namely, it is a good source of protein and is supposed to be an aid in a weight loss journey. I enjoyed this dish with some phulkas and it worked so well together 🙂
Time:
- Prep time – 15 minutes
- Cook time – 20 minutes
Ingredients:
- Paneer (Grated) – 400 g
- I grate the paneer if it is hard, but if yours is homemade it is probably easy to just crumble with your hands. Follow either method based on the paneer texture
- Large Red Onion (Finely Chopped) – 1
- Bell Peppers (Finely Chopped) – 2
- Roma Tomatoes (Chopped) – 2
- Indian Green Chilli (Chopped) – 2
- Cumin seeds – 1/8 tsp
- Ginger garlic paste – 2 tsp
- Turmeric Powder – 1/2 tsp
- Garam Masala Powder – 1/2 tsp
- Kashmiri Red Chilli Powder – 1 tsp
- Coriander Powder – 2 tsp
- Lemon Juice – 2 tsp
- Milk – 1/2 cup
- I use 2% Reduced Milk
- Extra Virgin Olive Oil – 2 tbsp
- Salt to taste
- Coriander Leaves for garnish – 1 tbsp
Method:
- Heat the oil in a pan and add the cumin seeds. Once the start to sizzle, add the ginger garlic paste and green chilli. Saute for 30 seconds
- Add the onions. Saute for 5 minutes
- Add the capsicum and tomatoes. Mix on medium heat for 5 minutes
- Add the masalas and salt. Mix for 2 minutes
- Add the lemon juice and paneer. Mix for 2 minutes until well combined
- Add the milk and mix well for 2 minutes (if you want more milk, add some now)
- Garnish with coriander and serve warm 🙂
