Gobi Mattar Curry is a spiced onion gravy as the base with the addition of cauliflower and peas. I could devour gobi mattar with some rotis in a matter of minutes! It tastes nourishing and homely. I took my regular gobi mattar recipe and made a small change. I added Ghee! I have always loved ghee and have read so much recently about its health benefits that I had to include it more often in my meals. - Cook time – 25 minutes
Ingredients:
- Cauliflower (Cut into Florets) – 1
- Large Red Onion (Chopped) – 1
- Cooked Peas – 3/4 cup
- Ginger (Finely Chopped) – 1 tsp
- Garlic (Finely Chopped) – 1 tsp heaping
- Cumin Powder – 1 tsp
- Kashmiri Red Chilli Powder – 1 tsp
- Coriander Powder – 1 tsp
- Turmeric Powder – 1/2 tsp
- Asafoetida/Hing – a pinch
- Salt to taste
- Water – 3/4 cup
- Ghee – 3 tbsp
- Coriander Leaves for Garnish
Method:
- Heat the ghee on medium heat in a pan. Add the hing and cumin powder and saute for 30 seconds
- Add the onions, ginger and garlic. Mix until the onions are golden brown
- Add the masalas and salt. Mix for a minute
- Add the cauliflower florets and peas. Mix it all together for two minutes. Add the water and mix for a minute
- Cover and cook on medium-low heat for 15 minutes
- Garnish with coriander leaves and enjoy 🙂
