Soy Basil Chicken Drumstick

Soy sauce, basil, and chicken make an excellent combination. I love how the flavors come together seamlessly to create a delicious dish. I had a new ingredient in my kitchen this weekend: Shaoxing Wine. It gives a dish the extra panache to win our heart and tummy. It all came together well! I had it with some basmati rice which made a perfect combination 🙂

Ingredients:

  • Chicken Drumsticks – 750 g (OR 4 Large Drumsticks)
  • Baking Soda – 1 tbsp
  • Sesame oil – 3.5 tbsp
  • Ginger-garlic paste – 2 tsp
  • Shaoxing Wine – 2.5 tbsp
  • Low Sodium Soy Sauce – 2.5 tbsp
  • Dark Sweet Soy Sauce (Kecap Manis) – 2.5 tbsp
  • Basil (Roughly cut) – 1 bunch

Method:

  1. In a bowl, add the chicken and the baking soda. Rub the baking soda to the drumsticks and set aside for 10 minutes
  2. Wash the chicken after 10 minutes until the baking soda is completely gone. Dry the chicken and set aside for Step 5
  3. Heat the sesame oil in a deep dish pan
  4. Add the ginger-garlic paste and saute for 30 seconds
  5. Add the drumsticks and stir fry for 3 minutes, making sure to turn the pieces
  6. Add the Shaoxing wine, soy sauce, and kecap manis. Mix everything for a minute, then cover and cook on medium heat for 20 minutes (Turn the pieces half way so that both sides get soaked in the gravy)
  7. After 20 minutes, add the basil leaves and stir with the chicken
  8. Serve hot in a claypot on a bed of rice (pour the gravy on the rice, it’s delicious!)
