Bread Upma

If you are looking for a change from regular sandwiches and want a flavourful breakfast, this recipe is for you! Every time I prepare this dish at home, I have no leftovers. It’s gobbled up in no time. I typically prepare this as an evening snack as it’s a perfect compliment to my chai. Do give this a try and you won’t regret it:)

Time:

  • Prep time – 15 minutes
  • Cook time – 15 minutes

Ingredients: 

  • Bread Slices – 10 slices
    • Cut the sides of each slice and throw. Then, cut the white part into squares and set aside
    • Option of using brown bread if you want a healthier alternative
  • Indian green chilli (chopped) – 2
  • Large Red Onion (chopped) – 1
  • White Potato (Boiled and mashed) – 1
  • Ghee (or Clarified Butter) – 4 tsp
  • Olive oil – 1 tsp
  • Garam Masala – 1 tsp
  • Mustard seeds – 1/4 tsp
  • Dried red chilli – 1
  • Curry leaves – 5
  • Salt – 1 tsp
  • Coriander leaves for garnish

Method: 

  1. Heat the ghee in a pan and fry the square bread pieces until they are golden. You are looking for toasted bread pieces as the texture. Set aside the prepared bread
  2. In the same pan, heat the olive oil. Add the mustard seeds, dried red chilli, and onion. Saute till the onions are soft and translucent
  3. Add the green chilli and curry leaves. Saute for a few minutes
  4. Add the garam masala and salt
  5. Add the mashed potatoes and mix well with the rest until well combined
  6. Add the bread slices and mix well until the potato mixture is evenly distributed around the bread. Be careful not to break the bread
  7. Garnish with coriander leaves and enjoy:)
