Pineapple Kesari

This dish makes me nostalgic as it takes me back to my undergrad days in India. My friends and I would go out for breakfast at a South Indian Restaurant for some good old dosa and sambar. For dessert, I would always order Pineapple Kesari! The Kesari melts in your mouth and provides a slight acidic kick from the pineapple. It’s absolutely delicious! Enjoy 🙂

Time:

  • Prep time – 20 minutes
  • Cook time – 20 minutes

Ingredients:

  • Rava – 1 cup
  • Sugar – 1 cup
  • Pineapple (chopped) – 1 cup
  • Cashew nuts (crushed) – 2 tbsp
  • Raisins – 2 tbsp
  • Cardamom powder – 1 tbsp (OPTIONAL)
  • Ghee – 2.5 tbsp
  • Water – 2 cups
  • Yellow colouring – a pinch (OPTIONAL)

Method:

  1. Roast rava in a tsp of ghee on low heat till it’s hot to touch. Remove and keep aside
  2. Add remaining ghee, then roast cashew nuts and raisins
  3. Add water and colouring. Cover and boil for five minutes on medium heat
  4. Add the pineapple. Cover and cook for 5 minutes
  5. Turn the heat on high and add the rava. Stir well, then cover and cook for 5 minutes
  6. Finally add the cardamom powder if required. Stir well
  7. Ready to serve:)
