This dish makes me nostalgic as it takes me back to my undergrad days in India. My friends and I would go out for breakfast at a South Indian Restaurant for some good old dosa and sambar. For dessert, I would always order Pineapple Kesari! The Kesari melts in your mouth and provides a slight acidic kick from the pineapple. It’s absolutely delicious! Enjoy 🙂

- Prep time – 20 minutes
- Cook time – 20 minutes
Ingredients:
- Rava – 1 cup
- Sugar – 1 cup
- Pineapple (chopped) – 1 cup
- Cashew nuts (crushed) – 2 tbsp
- Raisins – 2 tbsp
- Cardamom powder – 1 tbsp (OPTIONAL)
- Ghee – 2.5 tbsp
- Water – 2 cups
- Yellow colouring – a pinch (OPTIONAL)
Method:
- Roast rava in a tsp of ghee on low heat till it’s hot to touch. Remove and keep aside
- Add remaining ghee, then roast cashew nuts and raisins
- Add water and colouring. Cover and boil for five minutes on medium heat
- Add the pineapple. Cover and cook for 5 minutes
- Turn the heat on high and add the rava. Stir well, then cover and cook for 5 minutes
- Finally add the cardamom powder if required. Stir well
- Ready to serve:)
