Potato-Corn Stir Fry

Nothing like potato and corn recipes to put a twist on your day. It’s a spectacular combination! I love this family recipe because it can be put together in a jiffy and tastes so good. It makes a great side or evening snack and has crept its way into my comfort food list. Hope you enjoy it 🙂

Time: 

  • Prep time – 10 minutes
  • Cook time – 5 minutes

Ingredients: 

  • Tender corn – 200g
  • Potatoes (Medium Sized) – 4
  • Peppercorns (Crushed) – 1 tbsp
  • Kalonji (Onion Seeds) – 1 tsp
  • White Sugar – 1 tsp
  • Black Pepper Powder – a pinch
  • Curry leaves – 4 sprigs
  • Coriander (Finely chopped) – 1/4 cup
  • Cooking oil – 50 ml
  • Salt to taste

Method:

  1. Cook the potatoes, then peel and cut into cubes
  2. Steam the corn
  3. Heat the oil in a frying pan, add the onion seeds, peppercorns and saute for a few seconds
  4. Add the sugar, curry leaves, and salt. Mix for about 30 seconds
  5. Add the steamed corn, potatoes, and mix well. Cover and let this cook for about 2 minutes
  6. Garnish with coriander and serve warm 🙂
