Nothing like potato and corn recipes to put a twist on your day. It’s a spectacular combination! I love this family recipe because it can be put together in a jiffy and tastes so good. It makes a great side or evening snack and has crept its way into my comfort food list. Hope you enjoy it 🙂
Time:
- Prep time – 10 minutes
- Cook time – 5 minutes
Ingredients:
- Tender corn – 200g
- Potatoes (Medium Sized) – 4
- Peppercorns (Crushed) – 1 tbsp
- Kalonji (Onion Seeds) – 1 tsp
- White Sugar – 1 tsp
- Black Pepper Powder – a pinch
- Curry leaves – 4 sprigs
- Coriander (Finely chopped) – 1/4 cup
- Cooking oil – 50 ml
- Salt to taste
Method:
- Cook the potatoes, then peel and cut into cubes
- Steam the corn
- Heat the oil in a frying pan, add the onion seeds, peppercorns and saute for a few seconds
- Add the sugar, curry leaves, and salt. Mix for about 30 seconds
- Add the steamed corn, potatoes, and mix well. Cover and let this cook for about 2 minutes
- Garnish with coriander and serve warm 🙂
