Baby Arugula Parmesan Salad

Arugula, the aromatic green is my go to when I get bored of spinach, lettuce, and the usual greens. It has a low-calorie count and is packed with vitamins A and C. It’s what you need to grab the next time you are in a supermarket. I experimented a bit with it and made a lovely nutty salad. It’s got a great cheesy flavor too so that you don’t feel like your having something too healthy. Try it out and let me know how it is 🙂


  • Prep time – 10 minutes
  • Cook time – NA


  • Baby arugula – 2 handfuls
  • Grated Parmesan – 2 tbsp
  • Olive Oil – 1 tbsp
  • Freshly crushed black pepper – 1/4 tsp
  • Lemon Juice – 1 tsp
  • Organic Dried Blueberries – 1/2 tbsp
  • Pine Nuts – 1 tbsp
  • Crackers – 2 (OPTIONAL)


  1. In a large mixing bowl, combine the salad ingredients and toss well
  2. Place in a serving bowl with the crackers and enjoy 🙂
