Parmesan Baked Baby Potatoes

Yesterday was a lazy Saturday, with a lot of food and movies. I made some hot cajun chicken and a portion of these amazing parmesan baked baby potatoes. It made the perfect setting for movie day and by the end of it, we had wiped our plates clean. Potatoes are food for the soul. When baked, their crispy skin is pure joy to devour. Top it all of with some sour cream on the side and you are all set 🙂

Time: 

  • Prep time – 10 minutes
  • Cook time – 40 minutes
Ingredients: 
  • Baby Potatoes (Halved) – 400 g
  • Finely Grated Parmesan Cheese (It should be like sand in its consistency) – 1/2 cup
  • Garlic powder – 1/2 tsp
  • Smoked Paprika – 1/4 tsp
  • Dried Oregano – 1/2 tsp
  • Black Pepper Powder – 1/2 tsp
  • Salt – 3/4 tsp
  • Olive Oil – 2 tbsp
  • Dipping sauce:
    • Sour cream – 2 tbsp
    • Chopped Scallions – 1/2 tbsp
Method: 
  1. Preheat oven to 425 F
  2. In a bowl, combine the parmesan cheese, garlic powder, smoked paprika, dried oregano, pepper powder, and salt. Mix until the dry ingredients are well combined
  3. In a baking dish, combine pour the olive oil and tilt the dish until the olive oil has evenly coated the bottom
  4. Carefully and evenly, sprinkle the dry ingredient mixture into the pan. (Do not dump!)
  5. Place the potatoes over the cheese mixture, cut side down
  6. Bake for 40 minutes
  7. Once done, let it cool. Remove each potato carefully and place on a serving dish
  8. Serve with some sour cream mixed with scallions
