Peanut Cucumber Salad

The summer heat has arrived, and I need something to cool down, please! Bring those soaring temperatures down and beat the heat with this refreshing peanut cucumber salad. It’s perfect for those sweltering days! I ended up having this Asian-inspired salad for lunch and it was just what I needed to help cope with the mad summer. Try it as a side or as your main 🙂

Time: 

  • Prep time – 10 minutes
  • Cook time – NA

Ingredients: 

  • Mini Cucumber (Skin Removed and Sliced) – 5
  • Rice Vinegar – 1.5 tbsp
  • White Granulated Sugar – 2 tbsp
  • Sesame Oil – 1 tbsp
  • Crushed Red Pepper Flakes – 1/4 tsp
  • Salt – 1/2 tsp
  • Crushed Peanuts – 1 tbsp
  • Green Onions (Chopped) – 3

Method: 

  1. In a bowl, combine the rice vinegar, granulated sugar, sesame oil, crushed red pepper flakes, and salt. Mix well and set aside
  2. In a bowl, combine the remaining ingredients and the above dressing. Toss it and serve 🙂
