The summer heat has arrived, and I need something to cool down, please! Bring those soaring temperatures down and beat the heat with this refreshing peanut cucumber salad. It’s perfect for those sweltering days! I ended up having this Asian-inspired salad for lunch and it was just what I needed to help cope with the mad summer. Try it as a side or as your main 🙂

Ingredients:
- Mini Cucumber (Skin Removed and Sliced) – 5
- Rice Vinegar – 1.5 tbsp
- White Granulated Sugar – 2 tbsp
- Sesame Oil – 1 tbsp
- Crushed Red Pepper Flakes – 1/4 tsp
- Salt – 1/2 tsp
- Crushed Peanuts – 1 tbsp
- Green Onions (Chopped) – 3
Method:
- In a bowl, combine the rice vinegar, granulated sugar, sesame oil, crushed red pepper flakes, and salt. Mix well and set aside
- In a bowl, combine the remaining ingredients and the above dressing. Toss it and serve 🙂
