Baked Cajun Chicken

Crispy Chicken is my weakness…I can eat a bucket of it in one sitting….feeling a bit guilty at the end of it. So I had to come up with a crispy chicken recipe which was not deep fried. I had some extra chicken thighs in my freezer this weekend and decided to make some spiced crispy baked chicken. I love my family’s homemade cajun seasoning and it makes a perfect rub for chicken. So here’s a healthier crispy chicken recipe that is packed with flavor and is sure to make your tummies happy 🙂

Time: 

  • Prep time – 15 minutes
  • Cook time – 60 minutes

Ingredients for the Cajun Seasoning – I make this in bulk and keep aside for future use. We need only 5 tsp of this spice mixture for the recipe. You need to mix all the below ingredients together to get the cajun seasoning

  • Coarse Salt – 2 tbsp
  • Paprika – 2 tbsp
  • Garlic powder – 1 tbsp
  • Onion powder – 1 tbsp
  • Cayenne pepper – 1.5 tsp
  • Crushed Red Pepper Flakes – 1.5 tsp
  • Dried Oregano – 1.5 tsp
  • Dried Thyme – 1.5 tsp
  • Black Pepper Powder – 1.5 tsp

Ingredients for the chicken – these are the remaining ingredients for the recipe

  • All Purpose Flour – 1 cup
  • Chicken Thighs (Large Pieces) – 600 g
  • Olive Oil – 4 tsp

Method: 

  1. Preheat the oven to 425 F
  2. Take a baking dish and rub the olive oil on it
  3. Take each chicken thigh and dredge it in the all purpose flour. Place the flour coated chicken pieces on the baking dish
  4. Sprinkle 1/2 tsp of the cajun seasoning on the top of each chicken piece
  5. Bake in the preheated oven for 30 minutes
  6. After 30 minutes, flip each piece. Sprinkle 1/2 tsp of the cajun seasoning on top of each of the chicken piece
  7. Place it back in the oven and bake for 30 minutes
  8. Once done, place on a serving dish
  9. Serve warm 🙂
