Avocado Egg Breakfast Sandwich

I love filling, nutritious breakfasts that set a happy tone for the rest of the day. There are days when I love my breakfast so much that it ends up being lunch and dinner lol. Here is one of those recipes that get carried through the day. I love avocado and when they are spread on bread it’s creamy goodness is the best taste ever! You are going to love this one, it really does brighten up your day 🙂


  • Prep time – 10 minutes
  • Cook time – 2 minutes


  • Bread (Toasted till lightly browned) – 4
  • Avocado (Scoop out pulp and Mash) – 1
  • Extra Virgin Olive Oil – 1 tsp
  • Cayenne Pepper – 1/3 tsp
  • Salt and Pepper to taste
  • Eggs – 2
  • Olive oil – 1 tsp (for frying the eggs)
  • Roma Tomato or Regular Tomato (Sliced) – 1
  • Alfalfa Sprouts – 4 tbsp


  1. In a small bowl, add the mashed avocado. Mix in the olive oil, cayenne pepper, salt, and pepper. Mix until well combined
  2. Fry each egg sunny side up with olive oil
  3. To assemble the sandwich:
    1. Place a slice of the toasted bread on a serving plate
    2. Spread the avocado mash on the toast
    3. Place the sliced tomato
    4. Add 2 tbsp of the alfalfa sprouts
    5. Place 1 of the fried eggs
    6. Place another slice of the toasted bread
    7. Continue from Step 1-6 to assemble the second sandwich
  4. Enjoy all that drippy, creamy goodness 🙂
