Spinach is a super food loaded with a lot of nutrients and has the added benefit of being a low-calorie meal. Dark leafy vegetables like spinach are required for healthy skin and hair, good bone health, and provide protein, iron, vitamins and minerals. Wow, that’s a whole lot of good stuff! For dinner, I prepared a simple baby spinach salad with some of my favourite ingredients. Took me less than 10 minutes in all, so always keep these ingredients on hand 🙂
Time:
- Prep time – 8 minutes
- Cook time – 2 minutes
Ingredients:
- Baby Spinach – 2 handfuls
- Balsamic vinegar – 1 tbsp
- Goat cheese – 1/3 cup
- Garlic (chopped) – 1.5 tsp
- Hazelnuts (crushed) – 1 tbsp
- Raisins – 1 tbsp
- Cranberries – 1 tbsp
- Olive oil – 1 tbsp
Method:
- Take a salad bowl and add the baby spinach, balsamic vinegar, goat cheese and cranberries. Mix the ingredients together
- In a frying pan, heat the olive oil. Then add the garlic, hazelnuts and raisins. Fry until the garlic is golden brown. Pour this mixture into the salad bowl with the other ingredients
- Mix all together and enjoy 🙂
